What began with a passion for great food and genuine hospitality has grown into a culinary and hospitality business built on experience, relationships and a trusted community of talented people.

Chef Domenique Lanza | Co-Founder, PAERLS
With more than 20 years in the culinary world, Domenique has built a diverse career spanning accomplished professional kitchens, including those at Michelin level, private estates, events and culinary consulting.
A graduate of the Culinary Institute of America, her cooking is grounded in classical technique and inspired by seasonal ingredients, travel, the people she meets along the way and works beside. The cultures, traditions and perspectives she encounters continually influence her work, and she enjoys bringing those influences into the kitchen and celebrating them through the food she creates.
For Domenique, every engagement begins with the people. She enjoys getting to know each client, understanding what they’re looking for and creating food and experiences that feel distinctly their own.
Michael Sherman | Co-Founder, PAERLS
With more than 30 years in hospitality, culinary operations and training, Michael brings extensive industry experience to PAERLS. A graduate of Florida Culinary Institute, his background includes executive chef positions, hospitality management and culinary consulting.
As founder and CEO of Candidate Collective, Michael is dedicated to building connections throughout the culinary and hospitality industries, creating a community where professionals can share opportunities, make meaningful referrals and collaborate with one another.
His passion for food and hospitality extends beyond the kitchen, with a strong belief in the value of community, shared knowledge and supporting others in the industry.
